Low Calorie Spritzers with Fruit Ice Cubes

fruit ice cubesOne of my favorite summertime pleasures is a fancy fruity cocktail. The frillier and chillier, the better. But do you want to know the problem with that? They are super fattening! A frozen margarita can weigh in at over 500 calories in a single serving. That’s like drinking an entire meal. And as much as I love an adult beverage, I’m just not willing to spend an entire meal’s worth of calories on a single drink.

I think the thing I love most about frozen fruity drinks is the color. Colorful beverages are fun and indulgent. But indulgent doesn’t have to mean fattening. Let me show you my little trick…

ice cube trays filled with fruitI fill up a bunch of ice cube trays with fruit. Any kind will do. The more colorful, the better.

Then I fill them up with water and freeze them. Not particularly complicated, right? Drinks should never be complicated. In my opinion, anyway.

If I’m making a drink, it’s because I want things to become uncomplicated as soon as humanly possible.

Fruit SpritzersOnce they have frozen solid, I pop them out and pile them up in a glass. For my spritzers, I pour in three parts diet lemon-lime soda to one part vodka and I toss in some fresh mint leaves.

Not too fattening. Light and refreshing. And oh so very pretty. You really don’t need to be Martha Stewart to pull this stuff off.

I love these fruit ice cubes for so many different beverages. They are perfect in a fruit punch, sparkly in a glass of lemonade and especially lovely in iced tea.

A low calorie way to jazz up any drink without making you feel like you are missing out on the 500 calorie fruity concoctions!

A low calorie drink that won't let you feel like you are sacrificing anything for flavor and fun.
For the Fruit Cubes
  • 2 cups assorted fruits, cubed (see notes)
  • water
For the Spritzer
  • 3 parts lemon-lime diet soda (feel free to use regular soda if you rather)
  • 1 part vodka (rum can be lovely too)
  • mint leaves
  1. Place fruit in ice cube tray wells. Pour water over top. Freeze until solid.
  2. Place cubes and mint in glass. Pour soda and vodka over top. Give it a stir. Serve.
My favorite fruits for fruit ice cubes are kiwi, lemon, blueberries, strawberries, grapes, apple, cranberries, lime and cherries. The more colorful, the better.

    Prep time 4 hours??! Oh yeah, the ice cubes have to freeze! Anyway; beautiful and very colorful spritzers and wonderful pix Melanie! Cinco De Mayo margaritas were killer on the diet and these drinks look as good as your fiesta balls margarita and I’m sure have a lot less calories!! I can’t wait (okay, 4 hours!) to try these!

      • Hello, Melanie. I just stumbled upon this and was wondering a few things. 1. Is this just for aesthetics or can you actually taste any of the fruit flavors? I am assuming you can’t. Also, do you just pitch the fruit when you are done with the drink or do you eat it once the ice is melted? The reason I ask is that I found a mom’s website for something I am doing for work and it suggested making these ice cubes in order to get your child to drink more water. The more colorful, the better! Any help would be appreciated.
